If you want a clear mid-range tone, you should go for the maple. It also gives you a tight bottom end. I like them on Telecasters...but it's not an option for me on strats...
As for rosewood,It gives you a more clear/crusty high ends and a "fatter"/looser bottom end. I prefer rosewood on the stage guitars that are more versatile...

my andersons with maple fingerboards have always sounded fatter to me than my andersons with rosewood fingerboards. the maple has a tighter bottom end, but it has a bigger midrange to my ears, and that gives it a thicker sound. i don't hear maple as being brighter on the andersons, though i suspect that a lot of what people hear as maple being "bright" is due to the lacquer that was traditionally used on maple fingerboards. a raw maple board sounds way different to my ears than one from a '70s strat that has more or less been dipped in lacquer. and of course the satin finish that anderson uses sounds different, as well. the raw boards to me sound thicker and fatter, and as you get into a harder finish for the board, it gets to be brighter.
as far as rosewood, all the different varieties sound very different. indian rosewood is the most balanced. brazilian and african are a lot brighter and more open. madagascar is thicker and darker, with more growl than indian.

To me
The construction of the neck and style of truss rod are a major part of the puzzle.
Maple Fingerboard.. I'm not a fan, I have done both and 1 piece maple sounds better for guitars, more open and solid, maple fingerboard to me sounds muted.
1 piece Maple... solid, dry lower registers but punchy, sweet and tight sounding, strong upper mids, less brilliance than the rosewoods yes LESS, the perception of maple being brite comes from the finish used, people were listening to the finish not the wood
Pau Ferro... Midrangey like Maple but spankier, absolutely killer 80's big hair tone when teamed up with an Alder Body and Humbuckers, sweeter high end compared to Rosewoods but drier on the bass notes. Better with Humbuckers than Single coils, A good compliment with Ash body when you dont want Maple
Indian Rosewood... balanced warm, warm low end and sweet highs, cant go wrong really. The most popular
Brown Madagascar ... (we call African) Very close to Brazilian, spanky more brilliant than Indian, more fingerboard noise as well. Good looking wood
Red Madagascar (Bois d’rose) Not my favorite, we used to use it but I like the sound of the Brown version better, Bois d’rose is pushing too bright in my opinion.
Brazilian Rosewood... Spanky, Brilliant, no room for mistakes, it leaves you naked and has highs and lows, good clarity. Unusual patterns
Remember that you need to look at everything to get the whole picture, The Body wood, Bridge, Pickups , Amp, Speakers and your personal tastes
